EVER HAD THE MONDAY BLUES?
Even When It Wasn't Monday?

You've heard it said a thousand
times..."Your attitude determines your
altitude"...or..."Attitude is
everything". Now that I am one of the many
full time outside employed individuals, I am ever
more aware of this fact. Not that being in the
church doesn't lend itself to checking our
attitudes. I think it is the day to day dealing
with tasks and people from all over that brings
me to this line of thinking.
Every Monday I see it at work, as people
return from their weekends to resume their
responsibilities for the week. But for some
magical reason, Mondays always seem to be tense,
stressful, and leaning towards pure panic as
business resumes as usual. Another thing I've
noticed is the snapping at people that may happen
more freely than usual on this day.
Songs have been written, jokes have been
shared, all about the woes of a Monday morning.
Now, why is it just on Monday? Perhaps it is
because people are angry that their weekends have
ended, and they must return to work. At this time
in my life I can easily say, "Why aren't you
thankful that you even HAVE a job? Do you
remember what it was like to go without?"
Let's see how I do after I get a few more Mondays
under MY belt!
When you think about it, nothing has really
changed all that much. Business resumes, people
don't change from their habits of continually
changing...guess it's our attitude! Have you ever
noticed a day when everything seemed to be going
your way and you felt that you could do no wrong?
Then for some reason, disaster hit - or you
thought, and your attitude took a major nose
dive, the day ending with despair and
hopelessness. In the morning you thought you
could conquer the world, and by the afternoon you
didn't care if you even saw tomorrow. Nothing
really changed....except our attitudes. The day
still continued and the world still turned, and
God remained on His throne.
King David addressed this issue in one of his
Psalms when he asked himself, "Why so
downcast oh my soul? Put your hope in GOD!"
If you are struggling with your day, or week,
or month, or year....ask yourself (do a check up
from the neck up) "Just what is your problem
anyway soul?" No finger pointing allowed.
You are asking YOURSELF this question!
Without fail, IF you will listen, the Holy
Spirit will tell you just exactly what your
problem is. Chances are you will have to do a
major attitude adjustment and will probably find
yourself repenting. Ahhhhh, now didn't that feel
good? Just like taking a bath, and getting all
the filth off, or dumping a major load. Now...why
didn't we think of this earlier before we cursed
one of God's days and made it into something to
be dreaded?

This is the day the Lord has made! I will rejoice
and be glad in it!

Changing our Course

A few years ago, at the Seattle Special
Olympics, nine contestants, all physically or
mentally disabled, assembled at the starting line
for the 100-yard dash. At the gun, they all
started out, not exactly in a dash, but with a
relish to run the race to the finish and win.
All, that is, except one little boy who stumbled
on the asphalt, tumbled over a couple of times,
and began to cry. The other eight heard the boy
cry. They slowed down and looked back. Then they
all turned around and went back, every one of
them. One girl with Down's Syndrome bent down and
kissed him and said This will make it better.
Then all nine linked arms and walked together to
the finish line. Everyone in the stadium stood,
and the cheering went on for several minutes.
People who were there are still telling the
story. Why? What matters in this life is more
than winning for ourselves. What matters in this
life is helping others win, even if it means
slowing down and changing our course.

The Turkey Shot it out of the Oven
The 'turkey shot out of the oven
and rocketed into the air,
it knocked every plate off the table
and partly demolished a chair.
It ricocheted into a corner
and burst with a deafening boom
then splattered all over the kitchen,
completely obscuring the room.
It stuck to the walls and the windows,
it totally coated the floor,
there was turkey attached to the ceiling,
where there'd been never been turkey before.
It blanketed every appliance,
it smeared every saucer and bowl,
there wasn't a way I could stop it,
that turkey was out of control.
I scrapped and scrubbed with displeasure
and thought with chagrin as I mopped,
that I'd never again stuff a turkey
with popcorn that hadn't been popped.

Ann Criswell's Pumpkin Cheesecake
~Crust (recipe follows) ~
4 (8-ounce) packages light cream cheese,
softened * cup firmly packed
brown sugar
3 eggs (or 2 eggs plus 2 egg whites. 2
tablespoons flour
1 (30-ounce) can pumpkin pie mix (see note) * cup
chopped
pecans or walnuts
Pure maple syrup
Prepare crust; refrigerate until ready to
fill.
Soften unwrapped cream cheese in microwave at
medium (50 percent) power 2 minutes. Beat cream
cheese in large bowl until fluffy. Gradually add
sugar. Add eggs, one at a time, beating well
after each addition. Gradually add flour and
pumpkin pie mix. Blend well and stir in nuts.
Pour into crust-lined pan.
Bake in preheated 325-degree oven 1 hour 45
minutes, or until center feels firm when touched.
Cool in pan on wire rack. Carefully run a sharp
knife around edges to loosen sides so cake will
not crack on top. Brush top with maple syrup.
Chill completely. Remove sides of pan. When ready
to serve, garnish with pecans and whipped cream
or mixture of whipped topping and nonfat vanilla
yogurt. Makes 10 to 12 servings.
Crust
* cup graham cracker crumbs 3 tablespoons
melted butter
or diet margarine
1 teaspoon cinnamon 2 tablespoons firmly packed
brown sugar
3 tablespoons chopped pecans or walnuts
(optional)
Preheat oven to 325 degrees. Grease a 9-inch
springform pan, or coat with vegetable oil spray.
Combine crumbs, butter, cinnamon, sugar and nuts.
Line bottom and partly up the sides of prepared
pan and refrigerate until ready to add filling.
Note: To substitute canned pumpkin for pumpkin
pie mix, use 1 (16-ounce) can pumpkin; increase
sugar to 1* cups; use 5 eggs and * cup flour, and
add 2 teaspoons pumpkin pie spice.
