Today
I will share three special recipes that I made for a
potluck at church this past week.
Life is short, so let's start with dessert: CHOCOLATE
MOUSSE PIE (to die for!!)
This is taken from the premiere issue of Quick
Cooking, but it is the same as Hershey Pie, which I've
used since seminary days (that's a long time ago!) 1
milk chocolate candy bar with almonds (7 ounces)
Place the candy bar, marshmallows and milk in a
heavy saucepan (I used a double boiler so little stirring
is needed); cook over low heat, stirring constantly until
chocolate is melted and mixture is smooth.
Cool. Fold in whipped cream; pour into crust. Refrigerate
for at least three hours or overnight.
I garnish with Hershey bar pieces, Candy Kisses,
etc on little dollops of Cool Whip or Reddi Whip) Yield:
6-8 servings. SUMMERTIME
STRAWBERRY GELATIN SALAD
I apologize that the source has been cut off my
recipe. It is
either from Taste of Home
or Quick Cooking.
It was the first time I've made this recipe, but it
is delicious, pretty, and made a big hit. First
layer: Top

In a bowl dissolve strawberry gelatin in boiling
water; stir in cold water.
Pour into a 9 x 13 dish (I used a slightly smaller
glass Pyrex dish). Chill
until set. Meanwhile, place unflavored gelatin and cold water in a small
bowl; let stand until softened.
In a saucepan over medium heat, heat cream (do not
boil). Add softened gelatin; stir until gelatin is dissolved. Cool
to room temperature.
In a mixing bowl, beat cream cheese, sugar and
vanilla until smooth.
Gradually add the unflavored gelatin mixture; mix
well. Carefully
pour over th bottom layer. Refrigerate until set, about 1
hour. For top
layer, dissolve strawberry gelatin in boiling water; stir
in cold water. Cool
to room temperature.
Stir in strawberries; carefully spoon over middle
layer. Refrigerate
overnight. Yield:
12-16 servings. (Dot's
note: When
making a layered gelatin salad, I've found that it works
best to bring each layer to room temperature after it is
set and before adding the next layer. This keeps the layers from separating.) SUMMER
SPAGHETTI SALAD
This is also from Taste of Home or Quick Cooking.
This was especially nice to be able to make the
night before. 1
package (16 ounces) thin spaghetti, halved
Cook spaghetti according to package directions;
drain and rinse in cold water.
Place in a large bowl; add tomatoes, zucchini,
cucumber and peppers.
Combine remaining ingredients; pour over salad and
toss to coat. Cover
and refrigerate at least two hours.
Yield: 16

put a bunch of Holsteins into low earth orbit?
They called it the herd shot round the world. Two boll weevils grew up in South
Carolina. One
went to Hollywood and became a famous actor.
The other stayed behind in the cotton fields and
never amounted to much.
The second one, naturally, became known as the
lesser of two weevils. "These friars
were behind on their belfry payments, so they opened up a
small florist shop to raise the funds.
Since everyone liked to buy flowers from the men of
God, the rival florist across town thought the competition
was unfair. He asked the good fathers to close down, but
they would not. He
went back and begged the friars to close.
They ignored him. He asked his mother to go and ask the friars to get out of
the business. They
ignored her too. So,
the rival florist hired Hugh MacTaggart, the roughest and
most vicious thug in town to "persuade" them to
close. Hugh beat up the friars and trashed their store,
saying he'd be back if they didn't close up shop.
Terrified, they did so, thereby proving that: Hugh, and
only Hugh, can prevent florist friars.
